This Origen Cabernet Sauvignon is born from the granite and clay-loam soils of Melipilla, in the Maipo Valley. Its coastal terroir, influenced by the Pacific Ocean and proximity to the Maipo River, benefits from morning fogs and cool breezes. These mild Mediterranean climate conditions are ideal for a slow maturation that concentrates the flavors and aromas of the grape.

Hand-harvested starting the second week of April, the wine undergoes a 7-day cold maceration at 8°C to extract primary aromas. After fermentation, extended skin contact ensures a robust tannic structure. The aging of 80% of the blend in French oak barrels for 10 to 12 months adds complexity and softens its character.

In the glass, it offers complex aromas of blue fruit, licorice, cherry, spices, and floral notes. On the palate, it is a dense and weighty wine with a fresh and fruity feel that is creamy and leaves a long, persistent finish. It is suggested to serve at 17°C, making it an ideal pairing for grilled ribeye steak with rustic potatoes or a chickpea stew with Spanish chorizo.

Terroir (Vineyard)
  • Soil: Piedmont soils, of granitic origin and clay loam texture.
  • Climate: The vineyard is exposed to maritime influence due to its proximity to the Pacific Ocean and its location facing the Maipo River. It experiences morning fogs and refreshing breezes. The climate is temperate Mediterranean, with average maximum temperatures of 28 to 29°C and minimums between 12 and 15°C from December until the end of March.
Winemaking Process
  • Vintage: Manual, from the second week of April.
  • Fermentation: Cold maceration was carried out for 7 days at 8°C. Fermentation took place with selected yeasts, between 26 and 28°C. After fermentation, the wine remains in contact with its skins for 6 to 8 days.
  • Aging: 80% in French oak barrels for a period of 10-12 months.
