The character of this Cabernet Sauvignon is defined by its origin in the Maipo Valley, from vineyards located on granitic and clay loam soils at the foot of the mountains. The coastal terroir, with its marked maritime influence, morning fogs, and cool breezes, ensures a slow ripening process that concentrates the fruit and preserves a vibrant acidity.

Manual harvesting is carried out during the second week of April. In its vinification, a three-day cold maceration at 6°C is notable for enhancing primary aromas. 50-60% of the blend is then aged for 8 months in used French and American oak barrels, a process that softens the wine and adds a subtle spicy complexity.

The wine presents an attractive deep cherry red color. On the nose, it offers fresh aromas of cherries and currants, complemented by notes of toast. The palate is intense and juicy, with a medium body and a smooth structure that leads to a long and memorable finish. For optimal tasting, it is suggested to serve at 17°C, being ideal to accompany a classic pastel de choclo (corn pie) or lentils with longaniza (sausage).

TASTING NOTE

Deep cherry-red color. On the nose, fresh aromas of cherry and redcurrant with notes of toast and spice. On the palate, it is intense and juicy, with red berry flavors, medium-bodied and a smooth structure with a long finish.

Terroir (Vineyard)
  • Soil: Soils at the foot of the mountain, of granitic origin and clay loam texture.
  • Climate: The vineyard is exposed to maritime influence due to its proximity to the Pacific Ocean and its location facing the Maipo River. It experiences morning fogs and breezes that cool the vines. The climate is temperate Mediterranean, with average maximum temperatures of 28 to 29°C and minimums between 12 and 15°C from December until the end of March.
Winemaking Process
  • Vintage: Manual, during the second week of April.
  • Fermentation: Cold maceration is carried out for 3 days at 6°C. Fermentation takes place with selected yeasts, at temperatures between 26°C and 28°C.
  • Aging (Upbringing): 50-60% of the blend was aged for 8 months in fifth-use French and American oak barrels.
