Guillermo is a blend that captures the essence of the coastal terroir of the Maipo Valley. The vineyards are located in foothill soils of granitic and clay origin, which provide a base of minerality and structure. The climate, with its misty mornings and strong Pacific influence, ensures a slow and elegant ripening, key to the complexity of this wine.

The grapes are harvested by hand at the optimum time for each variety, between April and May. A long pre-fermentation maceration of 10 days at 5°C (41°F) and a traditional fermentation are used for a deep extraction of color and tannins. Aging is extended for 18 months in new French oak barrels, a decisive process that defines its character and its great aging potential.

Dominated by Carménère, the wine has an intense violet color. The nose is expressive, with aromas of spices, bitter chocolate, black tea and ripe black fruit. On the palate, it is a wine of great complexity, with structure, body and silky tannins that ensure a remarkable evolution in the bottle. We suggest decanting for an hour and serving at 16°C with ossobuco in red wine or wild boar ragu.

TASTING NOTE

Intense deep purple-red color. This Carménère-based Blend presents complex notes reminiscent of black fruits, plum and dried fruits. There are also notes of paprika, spice, tea, tobacco and graphite. On the palate, Guillermo 2018 presents a very smooth texture, with body and structure, displaying great freshness, juiciness and an acidity that gives it persistence and a long finish. This wine promises an interesting and long evolution in bottle.

  • Total acidity: 3.66 g/l.

Terroir (Vineyard)
  • Soil: Foothill soils of the Coastal Range; texture of granitic and clayey origin.
  • Climate: Misty mornings with fog and strong coastal influence due to the proximity to the Pacific Ocean and the Maipo River. The climate between December and March has average highs of 27-28°C and lows of 12-15°C.
Winemaking Process
  • Harvest: Handpicked. Merlot was harvested during the first week of April, while Cabernet Sauvignon was harvested during the second and third week of April. Cabernet Franc and Petit Verdot during the last week of April. Carménère during the first week of May.
  • Fermentation: Careful selection of clusters, followed by cold pre-fermentation maceration at 5 °C for 10 days in stainless steel tanks. Fermentation is traditional, with open pumping over from the beginning of the process, and is carried out with selected yeasts at a temperature of 26-28 °C.
  • Aging (Crianza): 100% of the wine aged for 18 months in new French oak barrels.

Alexia and Guillermo are unique and special wines. As special as our parents were to us. Making these two wines is no easy task. It takes a lot of work and countless hours to reflect the personality of our parents in these wines. We go through the vineyards selecting rows that will later reflect their character when we finish each blend. It is a process where every detail is very well cared for, in order to obtain these award-winning and iconic blends.
