This Sauvignon Blanc is the pure expression of its origin in the Maipo Valley, from vineyards planted in alluvial soils with a sandy loam texture. The maritime influence of the Pacific Ocean is a protagonist in its terroir, manifesting itself in morning mists and breezes that cool the afternoons, ideal conditions for developing an intense aromatic profile and vibrant acidity.

Harvested by hand during the second week of March, its vinification process is designed to preserve freshness. An 8-day cold maceration and a low temperature fermentation (11-13°C) are key, along with a 60-day aging on its fine lees in stainless steel tanks, which gives it texture and complexity in the mouth.

Clear and bright yellow in color, this wine displays floral, citrus and pear aromas, with a distinctive herbaceous tone that lends a spicy touch. The palate is defined by refreshing acidity, a pleasant texture and a long, lingering finish. Best served chilled between 10 and 12°C, it is a perfect accompaniment to sea bass ceviche or machas a la parmesana.

TASTING NOTE

Light yellow color. Floral, citrus and pear aromas, with a soft herbaceous and spicy tone. On the palate, it shows refreshing acidity with texture and a long, lingering finish.

Terroir (Vineyard)
  • Soil: Soils at the foot of the mountain, of granitic origin and clay loam texture.
  • Climate: The vineyard is exposed to maritime influence due to its proximity to the Pacific Ocean and its location in front of the Maipo River. There are morning mists and cooling breezes. The climate is temperate Mediterranean, with average maximum temperatures between 28 and 29°C and minimum temperatures between 12 and 15°C from December to the end of March.
Winemaking Process
  • Harvest: Manual, during the second week of March.
  • Fermentation: Pre-fermentation cold maceration for 8 days at 6°C. Fermentation was carried out at 11 to 13°C with selected yeasts. Post fermentation maceration for 60 days on fine lees.
  • Aging: 100% in stainless steel tanks.
