Born in Melipilla, Maipo Valley, this Carménère grows in granitic and clay loam soils of foothills, an ideal terroir for this variety. The Pacific coastal influence is felt through morning mists and cool breezes that moderate temperatures, allowing the grapes to slowly develop their spicy character and ripe tannins.

After a manual harvest during the first week of May, the wine undergoes a three-day cold maceration at 6°C (41°F). Fermentation is carried out at controlled temperatures to preserve the varietal profile. An 8-month rest in used French and American oak barrels for 50-60% of the blend provides elegant complexity without dulling the fruit.

It has an intense, deep carmine color with violet edges. It is a very expressive wine on the nose, with notes of red and black fruits, pepper, and earthy touches that intertwine with subtle toast and vanilla aromas. The palate is smooth and friendly in texture, a fresh wine with a long finish. It is recommended to be served at 17°C, and its spicy character makes it ideal for a chicken chili or a mild vegetable curry.

TASTING NOTE

Deep, intense carmine color with violet rims. The nose is very expressive with notes of red and black fruits, pepper and earthy notes, along with subtle hints of toast and vanilla. The palate is smooth, friendly in texture, fresh and long on the finish.

Terroir (Vineyard)
  • Soil: Soils at the foot of the mountain, of granitic origin and clay loam texture.
  • Climate: The vineyard is exposed to maritime influence due to its proximity to the Pacific Ocean and its location in front of the Maipo River. There are morning mists and cooling breezes. The climate is temperate Mediterranean, with average maximum temperatures between 28 and 29°C and minimum temperatures between 12 and 15°C from December to the end of March.
Winemaking Process
  • Harvest: Manual, during the first week of May.
  • Fermentation: A cold maceration is carried out for 3 days at 6°C (41°F). Fermentation is carried out with selected yeasts at temperatures between 26°C and 28°C.
  • Aging: 50-60% of the blend was aged in used French and American oak barrels of 5th use for a period of 8 months.
