This Origen Cabernet Sauvignon was born in the granitic and clay-loam soils of Melipilla, in the Maipo Valley. Its coastal terroir, with the influence of the Pacific Ocean and the proximity to the Maipo River, benefits from morning mists and cool breezes. These temperate Mediterranean climate conditions are ideal for slow ripening that concentrates the flavors and aromas of the grapes.

Harvested by hand from the second week of April, the wine undergoes a 7-day cold maceration at 8°C to extract primary aromas. After fermentation, an extended contact with the skins ensures a robust tannic structure. Aging of 80% of the blend in French oak barrels for 10 to 12 months adds complexity and softens its character.

In the glass, it offers complex aromas of blue fruit, licorice, cherry, spice and floral notes. The palate is dense and weighty, with a fresh, fruity palate that feels creamy and leaves a long, lingering finish. We suggest serving at 17°C, being the ideal pairing for a grilled cut of pork loin with rustic potatoes or a chickpea stew with Spanish sausage.

Terroir (Vineyard)
  • Soil: Soils at the foot of the mountain, of granitic origin and clay loam texture.
  • Climate: The vineyard is exposed to maritime influence due to its proximity to the Pacific Ocean and its location in front of the Maipo River. There are morning mists and cooling breezes. The climate is temperate Mediterranean, with average maximum temperatures between 28 and 29°C and minimum temperatures between 12 and 15°C from December to the end of March.
Winemaking Process
  • Harvest: Manual, from the second week of April.
  • Fermentation: A cold maceration was carried out for 7 days at 8°C (46°F). Fermentation was carried out with selected yeasts at 26 to 28°C (79 to 82°F). After fermentation, the wine remains in contact with its skins for 6 to 8 days.
  • Aging: 80% in French oak barrels for a period of 10-12 months.
