This Cabernet Sauvignon from the Vitrum line is an emblematic wine of the coastal terroir of the Maipo Valley. It is grown on the slopes and foothills of the Cordillera de la Costa in granitic soils with a sandy loam texture. The influence of the Pacific Ocean manifests itself in morning mists that moderate the climate, allowing for slow, concentrated ripening.

Harvested by hand during the third week of April, its production includes a careful selection of berries and a 7-day cold maceration to enhance its aromatic profile. Aging is carried out for 12-14 months in French barrels, 50% new and 50% second use, which gives it a great structure and a remarkable potential for evolution.

Intense, dark ruby red in color, this wine offers aromas of red fruit such as cherries and currants, with subtle notes of dried herbs, tobacco and vanilla. The palate is rich and expressive, with refreshing acidity and soft, elegant tannins. It is a wine with energy, depth and great cellaring potential. We suggest decanting and serving at 15 to 16°C with beef steak in black pepper sauce or lamb shank.

TASTING NOTE

Intense dark ruby red color. It offers aromas of red fruit (cherries, currants) and subtle notes of dried grass, framed by tones of tobacco and vanilla. The palate presents abundant red fruit with refreshing acidity and a texture of soft, elegant tannins. It is a full-bodied, energetic, deep wine.

Terroir (Vineyard)
  • Soil: Slopes and foothills of the Cordillera de la Costa, of granitic origin and sandy loam to sandy loam texture.
  • Climate: Coastal with morning fog due to the influence of the Pacific Ocean and the proximity to the Maipo River. Average maximum temperatures from December to March are 27-28°C, with average minimum temperatures of 12-15°C.
Winemaking Process
  • Harvest: Manual, during the morning of the third week of April.
  • Fermentation: A careful selection of clusters and berries is made. A pre-fermentation cold maceration is carried out at 5°C for 7 days in stainless steel tanks. Each variety is fermented separately with selected yeasts at temperatures between 24-28°C (75-82°F).
  • Aging: 100% of the wine was aged for 12-14 months in French oak barrels (50% new - 50% second use).
