The character of this Cabernet Sauvignon is defined by its origin in the Maipo Valley, in vineyards planted on granitic and clay loam soils at the foot of the foothills. The coastal terroir, with its marked maritime influence, morning mists and cool breezes, ensures a slow ripening that concentrates the fruit and preserves vibrant acidity.

The grapes are harvested by hand during the second week of April. Vinification includes a three-day cold maceration at 6°C to enhance the primary aromas. Fifty to sixty percent of the blend is then aged for eight months in used French and American oak barrels, a process that softens the wine and adds a subtle spicy complexity.

The wine has an attractive deep cherry red color. The nose offers fresh cherry and currant aromas complemented by toast notes. The palate is intense and juicy, with a medium body and smooth structure leading to a long and memorable finish. For optimal tasting, we suggest serving at 17°C, ideal with a classic corn pie or lentils with sausage.

TASTING NOTE

Terroir (Vineyard)
  • Soil: Soils at the foot of the mountain, of granitic origin and clay loam texture.
  • Climate: The vineyard is exposed to maritime influence due to its proximity to the Pacific Ocean and its location in front of the Maipo River. There are morning mists and breezes that cool the vines. The climate is temperate Mediterranean, with average maximum temperatures between 28 and 29°C and minimum temperatures between 12 and 15°C from December to the end of March.
Winemaking Process
  • Harvest: Manual, during the second week of April.
  • Fermentation: A cold maceration is carried out for 3 days at 6°C (41°F). Fermentation is carried out with selected yeasts at temperatures between 26°C and 28°C.
  • Aging: 50-60% of the blend was aged in used French and American oak barrels of 5th use for a period of 8 months.
